Baked apple rings

Dessert with South Tyrolean Fuji apples

Ingredients
3 eggs
130 g low-fat curd cheese
1/2 tsp vanilla pulp
1 pinch of cinnamon
40 g buckwheat flour
3 apples Südtiroler Apfel PGI (Fuji)
Coconut oil for frying

With: yoghurt, honey, grated almonds

Apple fritters
Preparation
Separate the yolk from the egg whites and beat the egg whites until stiff. Whisk the egg yolk with the curd cheese, vanilla pulp, cinnamon and buckwheat flour. Gently fold in the beaten egg white.

Core the apples with an apple corer, peel them and cut them into 1-2 cm thick slices. If you don't have an apple corer, first cut the apples into slices and then round out the core.

Heat approx. 1 tablespoon of coconut oil in a coated frying pan. Dip and turn the apple slices in the dough and fry in the hot frying pan on both sides for about 4 minutes per side. Enjoy with yoghurt, honey and grated almonds.
