Dessert with Golden Delicious apples from South Tyrol

Ingredients
200 g Lebkuchen
8 tablespoons amaretto

Baked apples
4 South Tyrolean apples (Golden Delicious), cored and diced
50 g sugar
200 ml apple juice
1 teaspoon cinnamon
1 teaspoon vanilla extract
½ teaspoon ground ginger
½ teaspoon ground coriander
½ teaspoon cardamom
1 pinch ground cloves
1 tablespoon cornflour
3 tablespoons apple juice

Cream
250 g mascarpone
250 g low-fat quark
200 g whipped cream
25 ml milk
2 teaspoons vanilla sugar

Topping
100 g flaked almonds
3 tablespoons sugar
1 tablespoon butter

Preparation
Prepare the topping by placing the butter and sugar in a pan and wait until they melt completely. At this stage, add the flaked almonds and cook until light brown. Transfer to baking paper and set aside to cool.
Mix 3 tablespoons of apple juice into the cornflour and stir until smooth.
Add the chopped apples into a pan together with the sugar, apple juice, and spices. Simmer for 5 minutes.
Gradually add the cornflour mix until the liquid reaches the desired thickness (slightly thick). Do not add it all at once, as the liquid could become too thick. Remove the pan from the hob to stop the thickening process.
Crumble the Lebkuchen and distribute in the glasses. Add the amaretto.
Whip the cream into stiff peaks and mix in the mascarpone, low-fat quark, milk, and vanilla sugar.
Distribute the baked apple mix into the glasses. Top with the mascarpone cream, and sprinkle with the flaked almonds.

Tip: Cocoa-covered marzipan balls are the perfect decoration for this dessert. You can also add raisins to the chopped apple mix.
