Apple and potato goulash

600 g potatoes
1 red, 1 green, 1 yellow sweet pepper
4 apples Südtiroler Apfel PGI (Gala)
2 tablespoons sunflower oil
2 tablespoons tomato puree
200 ml Italian tomato sauce (passata)
350 ml vegetable consommé
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 onions
2 garlic cloves

Apple and potato goulash
Peel the potatoes and apples. Chop the potatoes into bite-sized chunks, the apples into wedges.
Chop the sweet peppers into strips.
Cube the onions and crush the garlic cloves.
Add oil into a pan until nice and hot, then add the ingredients above and sauté.
Add the tomato sauce and vegetable consommé, bring to the boil, add spices, and cook with a covered pan for 15 to 20 minutes.
