Apple Carpaccio with apples from South Tyrol

Fruity apple carpaccio with mascarpone cream & fresh berries – a light summer dessert, quick to prepare and elegantly refined!

1/2 medium sized egg
75 g sugar
125 g mascarpone
1 apple from Südtiroler Apfel PGI (Granny Smith)
1 tbsp lemon juice
250 g mixed berries
5 fresh mint leaves

10 fresh mint leaves
2 medium sized eggs
250 g sugar
500 g mascarpone
4 apples from Südtiroler Apfel PGI (Granny Smith)
4 tbsp lemon juice
1 kg mixed berries
20 fresh mint leaves

Preparation
Mascarpone Cream:
  • Separate the egg and whisk the yolk with sugar and mascarpone until smooth.
  • Beat the egg white until stiff and gently fold it into the cream.
  • Let chill in the refrigerator for 2 hours.
Apple Carpaccio:
  • Wash the apples from Südtiroler Apfel PGI, pat them dry and remove the core using an apple corer.
  • Slice the apples thinly or shave them with a mandoline, then mix with lemon juice.
  • Arrange the apple slices on a serving platter and spoon the mascarpone cream on top.
  • Wash and gently pat dry the berries, then scatter them over the apples.
    Garnish with fresh mint and serve.
