In the middle of the apple orchards, a bizarrely shaped, green roof rises up into the sky, representing a new beginning.
"The aim of the green roof is to return to nature up there what’s been taken away during the construction down here," explains Peter. A few years ago, he and his wife Magdalena and their two daughters returned to their roots. Both had grown up on a farm and they made a positive decision to live and work as apple farmers.

Peter tends to the 3 hectares of apple orchard and, as a former cellar master, produces 3,000 bottles of sparkling apple cuvée annually from part of his harvested Gala, Golden Delicious, Granny, Braeburn, Fuji and Pink Lady® apples. For a period of three years, the sparkling wine ferments in the bottle, similar to champagne. It’s an absolute rarity in South Tyrol.
